Beans Stew

Serves - 5


2 Medium-sized white onions
6 Large tomatoes
2 Teaspoons of red pepper powder
1 Cup of Palm oil
4 Cups of black-eyed beans



  1. 1Rinse and soak beans in water and leave overnight
  2. 2Drain and rinse beans
  3. 3Add hot water to beans and simmer on medium heat for 2 hrs
  4. 4Dice 1 onion and blend with tomatoes
  5. 5Heat Palm oil on medium-high for about 6 minutes
  6. 6Add diced onions and pepper to heated oil and let simmer for 3 minutes
  7. 7Add cup of water to frying onions and let it simmer for 3 minutes
  8. 8Add blended tomato mix to frying onions and let sauce cook for 30 minutes
  9. 9Add cooked beans to sauce and let it simmer on low heat 30 minutes
  10. 10Add salt to taste
  11. 11Serve with Friend Plantain or Tatale and Gari
